Denis M. Kleinknecht's Heinzinger gourmet inn in Maisach is a world of enjoyment that operates according to its own rules: Denis buys only regionally and even cooks with hemp - an old tradition that he is reviving. Denis, I am really happy about this interview. In your Wirtshaus Heinzinger you cook sustainably, regionally and with hemp. What was your inspiration for this approach ? To be honest, that came with time. When I was head chef at the Hiscox in Munich in 2002/2003, I didn't care where the food came from at first - according to the motto: "The main thing is to have only the best. Then, six years ago, when I decided to move to the country, I had a big rethink. That's when I started thinking: "Where do I get the ingredients? What regional products are there?". So I started building my network. I'm grateful for the input of my growers, who inspired me to completely rethink and look at buying pretty much all ingredients locally. Unfortunately, that's not possible one hundred percent, because none of us can completely avoid the wholesale market
How did you get the idea to cook with hemp ? Four years ago, we founded the Nutrition Council for the Fürstenfeldbruck district. There I met a hemp farmer who gave me a few products to try out and told me what you can do with hemp. That was my kickstart. I then found out about the many advantages of hemp through my own research - including the historical demonization that happened to hemp. It had a lot to do with lobbying. In this case, the American cotton lobby was behind it. It was a thorn in their side that you can make many different types of textiles very cheaply from hemp because it is such a rapidly renewable raw material. Please tell me more about the properties of hemp! Industrial hemp is one of the healthiest foods and protein sources available. There is even a special variety of hemp with a protein content of 25 percent. This means that it could enable us humans to do without meat completely. Another aspect is the issue of CO2 binding, which makes hemp an enormously climate-friendly plant. One hectare of hemp binds a total of 20 tons of CO2. That is an incredible amount! A three-hectare forest does the same, of course - but only after it has grown for 30 years. For me, this means in plain language: We simply have to eat more hemp! So hemp is a well-known superfood ... How did it come to be demonized? As already mentioned, the defamation of the hemp plant started from the cotton industry in the USA. Unbelievable but true - it was put into a racist context by perfidious allegations and insinuations. There the circle closes to the topic slavery. Whereby it should be mentioned that the hemp plant I cook with is not to be confused with the marijuana plant. This psychoactive relative of the commercial hemp also belongs to the family of hemp plants and was therefore instrumentalized for slander campaigns. Funnily enough, hemp still has a dubious reputation in arch-Catholic Bavaria these days, which is completely unfounded. Here, commercial hemp is always confused with psychogenic cannabis (a type of hemp). Due to the legalization of the canabinoid hemp varieties in the USA, Canada and many others, also the commercial hemp gets more importance worldwide and the social acceptance increases. Hemp can alleviate many ecological and environmental problems because it has incredible versatility in its usability. This is something to think about. With my hemp kitchen, I personally try to make hemp presentable again. What criteria do you use to develop your menu? Depending! I am on the road a lot and see a lot. For example, this morning I was in the forest and found great mushrooms. So now mushrooms are going on the menu. When I discover new products at the market, I immediately think about how I can process them. That's how I get my ideas. By the way, I get most of my inspiration from nature. How much of your recipes is innovation - and how much is an interpretation of old dishes for modern times? The interpretation of ancient dishes plays an increasingly important role nowadays. Let's look at an Italian classic: Vitello Tonnato. It consists of veal and tuna. Veal is for me one of the most delicate pieces of meat, I take for example a part from the drumstick for it. Instead of tuna, which is not available fresh here, I take a char from my fish farmer. From this I then make a char mayonnaise, which tastes quite excellent. Next, I asked myself the question, "What can I replace the capers with?". By chance, I was inspired by another cook and discovered that fermented, salted margarita buds taste like capers. My guests were totally surprised that you can reinterpret an Italian national dish with completely regional ingredients and that it tastes even better in part because the char brings an incredible freshness unlike tuna. Do you cook by recipe or by inspiration? Mostly according to inspiration. However, there are a few dishes where I say, "That's the way it should be, you can't change that under any circumstances." In our house, for example, steamed dumplings have a great tradition. We've had them here every Thursday since 1927, and I remain true to that tradition. We even still have the old pots here in which the steamed noodles used to be made. Unfortunately, it's no longer technically possible to do it the same way. So I have developed a new technique to get these steam noodles exactly the way they used to be. I even managed to make them with reliable precision so that they always taste the same. That was my biggest challenge. You can preserve traditions, but you have to know how to use technology. By the way, I pay the most attention to the choice of ingredients. What values do you use to define your kitchen ? Honesty, definitely in the first place. What role does sustainability play in your restaurant? How important is cooperation with regional producers to you and what does it look like? The collaboration is essential. If products are out of stock in the market, I am still supplied, because I am not dependent on the well-known markets.My strategy is to be flexible - I don't think you have to have everything as standard on the menu. Thinking that certain goods simply have to be available all the time is the wrong mindset, which unfortunately many people and also professional colleagues have. In high-end gastronomy, it takes an incredible amount of effort to create and perfect new dishes. That's why you have to rely on the constant availability of the necessary basic ingredients. A top gourmet simply won't tolerate any quality fluctuations or deviations. He wants exactly that dish.Fortunately, we are now seeing a change in thinking. More emphasis is being placed on regionality. The expectation with me in the gourmet inn is therefore not the always constant availability, but the always best possible products that are available here in the region. You are very open minded and have a transparent inn for the guest. Anyone can look into the open kitchen and you are also happy to name your suppliers. Is this the new way to arouse curiosity and appreciation among guests? I have three different intentions with my open kitchen: First, we show that we do everything ourselves. We focus on transparency and have nothing to hide. Of course, this makes many guests curious, which leads me to the second point. After all, eating out should be more than just taking in food, it should also be an experience. And thirdly, the special thing about my gourmet inn is that you can experience real contact with the producers here. Suppliers come by regularly because they also like to eat at my place. And why? Because they know what's on the plate here. How important is it to you to teach the younger generation about healthy food and nutrition? What do you wish for the future in this area? We have to think about this seriously! In the Bavarian school system, there are 45 minutes of religious instruction three times a week in various forms, whereby the Catholics do not agree with the Protestants and the largest non-belief community is made up of atheists. Now Islam lessons are to be added ... My vision would be to completely abolish religious education and replace it with nutrition and cooking. The whole thing could then be called humanism and, of course, theology could be incorporated and go far beyond the subject of nutrition. Wouldn't it be wonderful if we cooked together recipes from all over the world, gladly also with less meat, since excessive meat consumption is generally unhealthy and not sustainable. Rather less meat, but high quality and species-appropriate. One could then purchase high-quality meat from regional, small-structured companies. In this way, children would learn where the food comes from, what it is, how it is produced and how it is prepared.The younger generation no longer knows anything about this! In my opinion, this is due to the misguided education policy that we have had for 30 years now. Nutrition is the basic need of every human being. Without sensible nutrition, nothing works. Education in the nutrition sector would create more understanding of the product and its origin. A great many children are now becoming obese because of sugar substitutes. These products mess with insulin levels and stimulate appetite. The dilemma of the Western world is that we demonize fat even though sugar is the biggest problem. Sugar has the same addictive properties as alcohol and cocaine. Cocaine releases happiness hormones, just as sugar does. That's why sugar apparently makes us happy - and addicted.

Alle Generationen fühlen sich in seinem Wirtshaus wohl. Auf seiner Speisekarte ist eine große Auswahl an sensationellen vegetarischen Gerichten zu finden, die man sonst nur in hippen Großstadt-Restaurants für Fashionistas findet. Auch der traditionelle Wirtshaus-Gast wird keinesfalls vergessen: Typisch bodenständige Gerichte sind mit höchsten Qualitätsstandards auf der Karte zu finden. Im Sommer lockt ein kleiner, feiner Biergarten in dem sich auch gerne Musiker aus London das bayerische Bier schmecken lassen. Nach dem Motto „erwarte das Unerwartete“. Hier bekommt der Gast eine ehrliche Küche mit fairen Preisen für überdurchschnittlich gutes Essen. Denis M. Kleinknecht sagt : „Ich will nicht reich davon werden, sondern davon leben können und meine Mitarbeiter fair bezahlen". Das Gourmet-Wirtshaus Heinzinger überrascht sogar Anspruchsvolle: Man wird durch das außergewöhnlich gute Essen einfach abgeholt. Denis, ich freue mich wirklich sehr über dieses Interview. In Deinem Wirtshaus Heinzinger kochst Du nachhaltig, regional und mit Hanf. Was war Deine Inspiration für diesen Ansatz ? Das kam, ehrlich gesagt, mit der Zeit. Als ich im Jahr 2002 / 2003 Küchenchef im Münchener Hiscox war, da war es mir anfangs noch egal, wo die Ware herkam – nach dem Motto: „Hauptsache, einfach nur das Beste“. Als ich dann vor sechs Jahren beschlossen habe, auf´s Land zu gehen, fand bei mir das große Umdenken statt. Da fing ich an nachzudenken: „Wo bekomme ich die Zutaten her? Welche regionalen Produkte gibt es?“. Also fing ich an, mir mein Netzwerk aufzubauen. Dankbar bin ich für den Input meiner Erzeuger, die mich dazu inspiriert haben, komplett umzudenken und zu schauen, dass ich so gut wie alle Zutaten in der Region kaufe. Ganz hundertprozentig ist das leider nicht möglich, denn keiner von uns kommt ganz am Großmarkt vorbei.
Wie kamst Du auf die Idee, mit Hanf zu kochen ? Vor vier Jahren haben wir den Ernährungsrat für den Landkreis Fürstenfeldbruck gegründet. Dort habe ich einen Hanfbauern kennengelernt, der mir ein paar Produkte zum Ausprobieren gegeben hat und mir erzählte, was man alles mit Hanf machen kann. Das war mein Kickstart. Die vielen Vorteile von Hanf habe ich dann durch eigene Recherchen herausgefunden – auch die geschichtliche Verteufelung, die dem Hanf passiert ist. Sie hatte sehr viel mit Lobbyismus zu tun. In diesem Fall steckte die amerikanische Baumwoll-Lobby dahinter. Ihnen war es ein Dorn im Auge, dass man aus Hanf sehr günstig viele verschiedene Arten von Textilien herstellen kann, weil er so ein schnell nachwachsender Rohstoff ist. Bitte erzähl mir mehr über die Eigenschaften von Hanf! Nutzhanf ist eines der gesündesten Lebensmittel und einer der gesündesten Eiweißlieferanten, die es gibt. Es gibt sogar eine spezielle Hanfsorte mit einem Proteinanteil von 25 Prozent. Das heißt, sie könnte uns Menschen den kompletten Fleischverzicht ermöglichen. Ein weiterer Aspekt ist das Thema CO2-Bindung, die den Hanf zu einer enorm klimafreundlichen Pflanze macht. Ein Hektar Hanf bindet insgesamt 20 Tonnen CO2. Das ist unglaublich viel! Ein drei Hektar großer Wald macht das natürlich auch – aber erst, nachdem er 30 Jahre herangewachsen ist. Für mich heißt das im Klartext: Wir müssen einfach mehr Hanf essen! Hanf ist also ein altbekanntes Superfood … Wie kam es, dass er verteufelt wurde? Wie schon gesagt ging die Verleumdung der Hanfpflanze von der Baumwollindustrie in den USA aus. Unglaublich, aber wahr – sie wurde durch perfide Behauptungen und Unterstellungen in einen rassistischen Kontext gerückt. Da schließt sich der Kreis zum Thema Sklaverei. Wobei man noch erwähnen sollte, dass die Hanfpflanze, mit der ich koche, nicht mit der Marihuana-Planze zu verwechseln ist. Diese psychoaktive Verwandte des Nutzhanfs gehört eben auch zur Familie der Hanfpflanzen und wurde deshalb für Verleumdungskampagnen instrumentalisiert.Lustigerweise hat Hanf im erzkatholischen Bayern heutzutage immer noch einen zweifelhaften Ruf, was völlig unbegründet ist. Hier wird immer wieder Nutzhanf mit dem psychogenen Cannabis (einer Hanfart) verwechselt. Durch die Legalisierung der canabinoiden Hanfsorten in den USA, Kanada und vielen weiteren bekommt auch der Nutzhanf weltweit mehr Bedeutung und die gesellschaftliche Akzeptanz steigt. Hanf kann viele ökologische und umweltpolitische Probleme mildern, da er eine unglaubliche Vielseitigkeit in der Verwendbarkeit besitzt. Darüber sollte man mal nachdenken. Mit meiner Hanfküche versuche ich persönlich, den Hanf wieder salonfähig zu machen. Nach welchen Kriterien entwickelst Du Deine Speisekarte? Je nachdem! Ich bin viel unterwegs und sehe sehr viel. Heute früh war ich zum Beispiel im Wald und habe dort tolle Pilze gefunden. Also kommen jetzt Pilze auf die Speisekarte. Wenn ich auf dem Markt neue Produkte entdecke, denke ich sofort darüber nach, wie ich sie verarbeiten kann. So hole ich mir meine Ideen. Die meisten Inspirationen bekomme ich übrigens in der Natur. Wieviel von Deinen Rezepten ist Innovation – und wieviel ist eine Interpretation alter Gerichte für die Neuzeit? Die Interpretation von alten Gerichten spielt heutzutage eine immer größere Rolle. Lass uns einen italienischen Klassiker betrachten: Vitello Tonnato. Es besteht aus Kalbfleisch und Thunfisch. Kalbfleisch ist für mich eines der delikatesten Stücke Fleisch, ich nehme zum Beispiel ein Teil aus dem Schlegel dafür. Anstelle von Thunfisch, den es ja hier nicht frisch zu kaufen gibt, nehme ich dann einen Saibling von meinem Fischzüchter. Daraus mache ich dann eine Saibling-Majonäse, die ganz hervorragend schmeckt. Als nächstes stellte ich mir die Frage: „Womit kann ich die Kapern ersetzen?“. Durch Zufall wurde ich von einem anderen Koch inspiriert und entdeckte, dass fermentierte, eingesalzene Margarittenknospen wie Kapern schmecken. Meine Gäste waren total überrascht, dass man ein italienisches Nationalgericht mit komplett regionalen Zutaten neu interpretieren kann und dass es zum Teil auch noch besser schmeckt, da der Saibling eine unglaubliche Frische im Gegensatz zum Thunfisch mitbringt. Kochst Du nach Rezeptur oder nach Inspiration? Meistens nach Inspiration. Es gibt jedoch ein paar Gerichte, da sage ich: „Das gehört so, dass darf man auf keinen Fall ändern.“ In unserem Haus haben zum Beispiel Dampfnudeln eine große Tradition. Es gibt sie hier jeden Donnerstag, schon seit 1927. Dieser Tradition bleibe ich treu. Wir haben hier sogar noch die alten Töpfe, in denen die Dampfnudeln früher gemacht wurden. Leider kann man das technisch nicht mehr genauso umsetzen. Also habe ich eine neue Technik entwickelt, um diese Dampfnudeln genauso hin zu bekommen, wie einst. Ich habe es sogar geschafft, dass ich sie mit verlässlicher Präzision herstelle, so dass sie immer gleich schmecken. Das war meine größte Herausforderung. Man kann Traditionen bewahren, muss aber wissen, wie man mit der Technik umgeht. Übrigens lege ich auf die Auswahl der Zutaten das größte Augenmerk. Über welche Werte definierst Du Deine Küche ? Ehrlichkeit, auf jeden Fall an erster Stelle. Welche Rolle spielt Nachhaltigkeit in Deinem Gasthaus? Wie wichtig ist Dir die Zusammenarbeit mit regionalen Erzeugern und wie sieht sie aus ? Die Zusammenarbeit ist essenziell. Falls auf dem Markt Produkte vergriffen sind, werde ich immer noch beliefert, da ich von den bekannten Märkten nicht abhängig bin.Meine Strategie ist, flexibel zu sein – ich finde, man muss nicht alles als Standard auf der Speisekarte haben. Zu denken, dass bestimmte Waren einfach immer verfügbar sein müssen, ist der falsche Denkansatz, den leider viele Menschen und auch Fachkollegen haben. In der Spitzengastronomie bedeutet es unglaublich viel Aufwand, neue Gerichte zu kreieren und zu perfektionieren. Deshalb ist man auf die ständige Verfügbarkeit der nötigen Grundzutaten angewiesen. Ein Top-Gourmet duldet einfach keine Qualitätsschwankungen oder Abweichungen. Er will genau dieses Gericht haben.Jetzt haben wir erfreulicherweise ein Umdenken. Man setzt mehr auf Regionalität. Die Erwartungshaltung bei mir im Gourmet-Wirtshaus ist deshalb nicht die immer ständige Verfügbarkeit, sondern die immer bestmöglichen Produkte, die es hier in der Region gibt. Du bist sehr open minded und hast ein für den Gast durchsichtiges Wirtshaus. Jeder kann in die offene Küche schauen und Du nennst auch gerne Deine Lieferanten. Ist das der neue Weg, um Neugierde und Wertschätzung bei den Gästen zu wecken? Mit meiner offenen Küche verfolge ich drei verschiedene Absichten: Erstens zeigen wir, dass wir alles selber machen. Wir setzen auf Transparenz und haben nichts zu verstecken. Das macht natürlich viele Gäste neugierig, was mich zum zweiten Punkt führt. Denn Essen gehen soll ja mehr als nur Nahrungsaufnahme sein, es soll auch ein Erlebnis sein. Und drittens ist das besondere an meinem Gourmet-Wirtshaus, dass man hier leibhaftigen Kontakt mit den Erzeugern erleben kann. Lieferanten kommen regelmäßig vorbei, weil sie auch gern bei mir essen. Und warum? Weil sie wissen, was hier auf dem Teller ist. Wie wichtig ist es Dir, der jungen Generation gesundes Essen bzw. gesunde Ernährung beizubringen. Was wünscht Du Dir hier für die Zukunft? Darüber müssen wir uns ernsthaft Gedanken machen! Im bayerischen Schulsystem hat man ja drei Mal in der Woche 45 Minuten Religionsunterricht in verschiedenen Formen, wobei sich die Katholiken mit den Evangelischen nicht einig sind und die größte Nichtglaubensgemeinschaft die Atheisten stellen. Jetzt soll auch noch Islam-Unterricht dazu kommen ... Meine Wunschvision wäre, den Religionsunterricht völlig abzuschaffen und durch Ernährungslehre und Kochen zu ersetzen. Das Ganze könnte man dann Humanismus nennen und natürlich könnte man auch Theologie mit einfließen lassen und weit über das Thema Ernährung hinausgehen. Wäre es nicht wunderbar, wenn wir gemeinsam Rezepte aus aller Welt kochen würden, gerne auch mit weniger Fleisch, da übermäßiger Fleischkonsum generell ungesund und nicht nachhaltig ist. Lieber weniger Fleisch, dafür hochwertig und artgerecht. Man könnte dann hochqualitatives Fleisch aus regionalen, kleinstrukturierten Unternehmen erwerben. So würden die Kinder lernen, wo das Lebensmittel her kommt, was es ist, wie es produziert wird und wie man es zubereitet.Die junge Generation weiß davon gar nichts mehr! Meiner Ansicht nach liegt das an der fehlgeleiteten Bildungspolitik, die wir nun schon seit 30 Jahren haben. Ernährung ist das Grundbedürfnis eines jeden Menschen. Ohne vernünftige Ernährung funktioniert nichts.Durch Bildung auf dem Ernährungssektor würde mehr Verständnis für das Produkt und seine Herkunft entstehen. Sehr viele Kinder werden jetzt wegen der Zucker-Austauschprodukte adipös. Diese Produkte bringen den Insulinspiegel durcheinander und regen den Appetit an. Das Dilemma der westlichen Welt ist, dass wir Fett verteufeln, obwohl Zucker das größte Problem ist. Zucker hat die selben Suchteigenschaften wie Alkohol und Kokain. Durch Kokain werden Glückshormone ausgeschüttet, genauso wie beim Zucker. Deshalb macht uns Zucker scheinbar glücklich – und abhängig.

Sometimes you wish you had a fairy godmother to conjure up healthy, varied food for you.But what actually prevents us from simply doing something for ourselves again and taking delicious provisions with us for the day?Mostly it is the unwillingness to cook extra and to do a lot of work in the evening with culinary preparations for the next day.You can also use leftovers from the previous day for the bento box, bread with spread and salad or quickly create something new by mixing simple dishes together (couscous, pasta with tomatoes and vegan fish sticks, cold tomato sauce and the like).It is not only practical and tasty to have your own food with you, you also save a lot of money. Canteen trips become unnecessary and you are no longer forced to throw away spoiled food because you are not at home all day. A very important aspect: the Bento Box is sustainable and environmentally friendly: since you simply rinse the box in the evening and reuse it the next day, you save tons of polluting packaging material. The perfect ratio of food in the Bento Box The idea behind the Bento Box is to accommodate several different dishes or courses in small portions in a single box, so that the very sight of opening it really makes you want to eat. Different components and flavors should make for a colorful, delicious and varied meal. A well-designed bento box contains carbohydrates, proteins, vegetables and something fruity. With the help of the box, you can wonderfully control how much nutrients you eat - and flexibly adjust according to your needs. Another advantage is that you always know what ingredients you are eating, especially in convenience foods, which often contain too many additives and preservatives, as well as large amounts of sugar and salt.Pickles definitely always taste good and refreshing.This is virtually the cherry on the cream pie or in this case the taste explosion in the Bento Box. Bento Boxen sind die japanische Antwort auf eine gesunde,abwechslungsreiche Mittagspause.Kaum jemand würde beim Anblick der hochmodernen Bento-Boxen denken, dass ihre kulturellen Ursprünge sehr weit zurückliegen. Bereits seit dem fünften Jahrhundert transportieren Menschen in Japan ihre Mahlzeiten in Behältnissen mit Trennwänden. Moderne Varianten bestehen aus Holz, Aluminium oder Kunststoff, haben mehrere Fächer und sind zuweilen mehrstöckig – je nach Anzahl der Personen. Ein sehr wichtiger Aspekt : die Bento Box ist nachhaltig und umweltschonend: da man die Box am Abend einfach ausspült und am nächsten Tag wieder verwendet, spart man Unmengen an umweltbelastendem Verpackungsmaterial. Dadurch schafft man mehr Abwechslung,Augenschmaus und Ausgewogenheit.Traditionell wird der Inhalt der Bento-Box nicht aufgewärmt, sondern bei Zimmertemperatur gegessen. Da sich beim wiederholten Aufwärmen Giftstoffe bilden, die Bauchschmerzen und Übelkeit hervorrufen können, ist die Mahlzeit so viel magenfreundlicher. Man fühlt sich nicht so voll wie nach einem warmen Gericht. Außerdem kannst man essen, wann und wo man möchte. Wissenschaftlich wurde sogar nachgewiesen, dass Menschen, die ihr Essen selbst zubereiten, mit mehr Achtsamkeit die Nahrung zu sich nehmen und das Essen mehr wertschätzen.
